For a foodie like me, the biggest reason to visit the newly opened Wizarding World of Harry Potter in Orlando,is to buy the unusual candy and sample Harry's beverage of choice - Butterbeer!

Since going across the country for candy and a pint of Butterbeer is not practical, I decided to make my own batch and . . . . . share it with all of you.

Butterbeer

Ingredients for Butterscotch Sauce

1/4 cup butter
1/2 cup packed light or dark brown sugar
1/2 cup half & half or heavy cream
1/4 tsp. salt (or to taste)
1 tsp. vanilla

Method

Whisk everything but the vanilla in a small pot and set over medium heat. Bring to a gentle boil and simmer for about 5 minutes, whisking occasionally. Remove from heat and add the vanilla. Cool completely before using in your Butterbeer recipe.

Ingredients for Butterbeer

Vanilla Ice cream or frozen yogurt
Ginger Ale or Soda Water

Putting It All Together

For each serving, put a scoop of vanilla ice cream into a tall glass and drizzle with a tablespoon or two of butterscotch sauce (store bought works too). Stir with a spoon to soften the ice cream and blend in the sauce. Fill the rest of the glass with Ginger Ale, and voila, your Butterbeer is ready to be slurped down. Don't forget to propose a toast to the young wizard who brought us this delicious concoction.
